Banana and Egg Pancake
Prep time: 1 minute
Cook time: 5 minutes
1 banana (ripe)
1/4 tsp of xanthan gum (to help them hold)
Put the ingredients in a blender and pulse until smooth
Warm cast iron pan to medium heat, wipe with coconut oil. Cook 8-10cm pancakes for 45 seconds on each side.
I chose to serve mine with Hemsley’s mango cashew cream.
Nutritional-2-pennies: I love eggs; they are a relatively cheap superfood, full of protein and will keep you super full. The common worry is for those who are trying to lower their cholesterol to stay clear of eggs as they contain dietary cholesterol. But new research shows dietary cholesterol does not turn into cholesterol in the body – yippee!!
